Derek’s Fancy Fish Recipe

If you are looking to change things up in the kitchen, member Derek Fiscus has a great recipe that is easy to prepare, doesn’t leave a mess and tastes out of this world! Since he’s a professional (read about him here), he doesn’t really use recipes so he’s created this just for you.

Fancy Fiscus Fish

1/3 cup grated ginger root

3-4 Thai chilis minced or 2 T chili garlic paste

2 T rice wine vinegar

1  T fish sauce

1 T fresh lime juice

1 clove garlic minced

4-6 ounce fish steaks, halibut, red snapper, yellowtail (hamachi)

Into one bowl squeeze the grated ginger to get the juice only then add garlic, fish sauce, vinegar, lime juice, and chilies mix set aside.

Preheat oven to 425 degrees.

Season fish steaks with kosher salt.

In an oven-safe sauté pan over high heat add a bit of oil so fish doesn’t stick. When the oil smokes, carefully add fish steaks and sear 3 minutes, turn and spoon chili mixture over each steak and put into the oven for 7 minutes.

Remove from oven and serve in bowls over buckwheat noodles and kimchi, topped with microgreens – or – anything you like!
